categories and sub-categories for my e-commerce web site

I am creating an e-commerce platform for vendors in the middle east. I would like a professional to go through at least 5 competitor web sites then:
- First milestone: Browse all the categories and sub-categories (mining? or scraping?) then deliver an excel file or google-doc table listing all the categories of these pages and also including 4000 categories and subcategories I have already in my software. The table has to have an appropriate format (to be discussed) which makes it easy to analyse it to fined the appropriate categories for our market.
- Second milestone: Create a table with about 15-25 categories, each with 5-15 sub-categories and then each of the sub-categories containing 5-15 sub-sub-categories matching our project objectives and the region.
- Third milestone: inter the data into our category table keeping an eye on the requirements of our software table.
