Development of Email Monitoring System

We are preparing to launch a software application and are looking for help with discreet projects that are part of last few sprints before release. For this project, we're looking for a windows service or even an exe run on a chron job which can monitor an Office365 email account, and when a new email enters the system, perform the following actions: 1) parse the email into a specific format (subject, body, from, to) as well as parsing out certain specific information (for example: Conversation Index, Conversation Topic, Conversation ID?), plus attachments 2) convert the data into a JSON format and post the object plus any attachments to a specific web API that we will provide. The ideal solution will come with instructions on how to install/set up the solution, as well as how to configure the target mailbox (including login credentials) and target URL for the web API. We have a system where users can send communications from our system to other e-mails, the purpose of these tools is to capture replies so we can store them in our database and generate relationships with existing messages and other objects. If needed we can provide a mailbox and credentials for testing purposes. If any third-party libraries, plugins, assets, or code is used in this solution, we will need to review the cost and licensing agreement(s) of each before approving their use in this solution.
