Добрый день. В Prestashop просмотрите в раздел "Статусы" заказов Там в принципе все предусмотрено. Например если поменялся статус заказа клиенту отправяется письмо (галочку отправляь или нет вы имеете возможность ставить) Макет этого письма также в админке можно подправить. Напишите пожалуйста более детально что хотите реализовать.
