As a vegetarian who goes through occasional phases of vegan eating, I have a solid basis of understanding what it takes to create a meal with dietary restrictions. I think of myself as a health-conscious individual with a keen interest in nutrition and wellness, and with a growing curiosity about different styles of eating and methods of maintaining health and energy through diet.
As a resident of Boulder, Colorado, one of the most active and health-conscious cities in the United States, I've been exposed to many theories about which nutrients, vitamins, superfoods, etc. are best for one's health. After having carefully considered the options and performed extensive research, I feel confident that I know the necessary components of a well-balanced meal.
I'm excited about the opportunity to focus my creativity on a project such as this. My estimate is that I could complete 2 recipes per day over 10 business days, with a total of around 25-35 hours worked.
