Setup redmine on AWS and migrate 3 existings installs to new server

Hi,
I have 3 installs of redmine running on my server (for different companies) that all need to be migrated to a new AWS server. The installs are all 2.1.x. and are run thru thin and nginx on debian. I would like to keep this setup (no apache). This is NOT an aptitude install redmine* etc...
I have attempted this myself however, I have run into issues with Ruby/Gems conflicts and since I'm not a ruby person, I have run into various conflicts that I do not know how to fix and have not been able to resolve thru the usual google and IRC channels.
I will do ALL server setup minus the actual ruby/gems/redmine install. I'm sure for the right person this is a very simple process of < 2-3 hours.
I would like to complete this before the end of the week (Friday May 3rd).
Please no canned responses - if your messages are not relevant to what I have put above I will delete it.
Thanks and look forward to hearing from you.

Hi, I have extensive experience with redmine since I am using it myself for more than 3 years. I can install, migrate and troubleshoot redmine servers. Please let me know if you are interested Thanks
What you need is different ruby / gemset environment for each redmine application. Won't use aptitude or any ruby from debian repository, I never recommend that method to anyone installing ruby on debian. Take a look Más
