modify prestashop template for restaurant delivery service

I want to run a restaurant delivery service.
Where I live there are almost no restaurants which are delivering and no "delivery only" restaurants.
I will have contracts with restaurants which don't offer delivery and do the delivery for them through my website and my own drivers.
I found a Prestashop template that I really like at [url removed, login to view] but it has to be customized.
I will enter all information etc myself, I only need the template modified to my needs so I can build the site like I want it.
- When customers visit the website they can choose a restaurant they want to order from, only restaurents that are currently open are shown.
- They need to be able to sort the restaurants further by category (Thai, Italian etc) if they want
- Once they click on a restaurant there will be a page describing the restaurant with pictures and google map location
and the sidebar with the restaurant's menu categories
- this restaurant page needs to be a "template page" because every restaurant will get it's own.
- it can't be possible for a customer to pick items from different restaurants in one order.
- it has to be really easy for me to add/remove/edit restaurants/menus/pictures/pages etc from the backend
- I need changes within the checkout process, just deleting "Step 4" since there won't be any different shipping options (flat shipping fee) and also deleting "country selection" since I will only serve one Country
- I also want my own logos used for the website, not the stock "Food Store" logo, if you can design logos as well that's great, will get someone else to do it otherwise
- changes in the top menu bar
I expect the requirements to change as the project goes on, so I need the winner to be able to communicate with me daily, preferably on skype chat.
