I have experience in the use and design of products with the Sim800.   I have currently made a design for the control of openings of electric gates for residences. This design controls a relay through a phone call and other relays with text messages. In this design it was necessary to use the incorporation of authorized users through text messages or via serial using a PC. The authorized telephone numbers are stored in the eeprom memory of the arduino. Other unauthorized numbers may not use the equipment for safety. This design can be adjusted to your needs by making changes in the code and the hardware. I can send you pictures of the assembly of my bread board. In my case I am using arduino nano. Recently I have done this type of project which based on sim808 GSM/GPRS/GPS based module with Arduino.

I have a fully working water management system with any Android device via the Internet. The controller works in conjunction with the SIM800 module. You can easily change the functional for your tasks. I advise you to consider the option of managing non-SMS messages, then I can make you a full visualization with feedback.
