Our emails are currently through google apps (using our own domainI) but we just sold our domain name Can we set it up so our current email (using the domai) forwards to another email addess while giving access of the domain to the new owner?

@domain name always goes with domain though there are 2 options. u can just forward the domain to next cleints hosting and keep domain for a while or u can ass the new buyer to keep the emails settings for you for a while

I have experience on setting up custom email addreses with the domain.I worked on AWS as well as shared hostings. I even know the mail servers which offers free custom email services upto a limit.
